The Story

A nod to Mexican agave spirits whose flavour from the combination of a bountiful harvest, deep tradition, and refined craftsmanship.

Fresh, aged, and oven-roasted squash is carefully fermented with Champagne Yeast, and then distilled to create a bright spirit that captures the agricultural abundance of the Canadian north.

Yeast: Saccharomyces bayanus

Base: North Georgia Candy Roaster squash grown at Prairie Gardens.

Serving Recommendations

Enjoy this one-of-a-kind spirit neat, over ice, or in your favourite cocktails. For a unique change of pace, it can be substituted for cocktail recipes calling for unaged agave spirits or fruit brandies.
